Pancake lettering is simple with the Wilton Decorating Squeeze Bottles (below). You could also use any other type of squeeze bottle you have available at home. I picked this one up at Michael's and found it worth the investment. It writes very smoothly.
I do add a bit more milk to the pancake batter that is in the squeeze bottle. I also add some food coloring to help create visual contrast.First step, pour the pancake batter in the the hot skillet. Wait till little bubbles start to appear, then write with the contrasting color on top of the pancake. Flip it over and brown the side with the writing. The color fades a bit when the pancake gets browned. So more color would be better.
