Banana Egg Pancakes. (Gluten Free, Whole30 Compliant, Paleo and delicious)
2 eggs
1 banana
1/2 tsp Baking Powder
1/2 tsp Cinnamon
Directions:
Peel the banana, slice it then smash the banana down to a puree like texture. Crack two eggs into another bowl, whip them up nicely. Combine egg with banana, then add the baking soda and cinnamon. Heat up coconut oil in a small frying pan on medium heat. Pour approximately 1/3 cup pancake mixture per pancake. It makes 3-4 pancakes.
