Penne Rosa with Chicken


I made this tonight. Super easy and pretty tasty. Click through the link to get the official recipe. I am more of a rennogade when it comes to cooking. I change things and made do with what my family will actually eat and what we have in the house. I ended up baking 4 chicken breasts (instead of shrimp) in the oven with salt, pepper, red pepper and garlic.

Then cooked up a box of penne pasta. Sauteed some mushrooms, tomatoes, and spinach. Combined everything together with one container of fat free greek yogurt, half a jar of marinara sauce and 1/2 cup of Shredded Parmaesan cheese.

There was enough for dinner and plenty of left overs for the coming days (and work lunches).
